1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1 red bell pepper, diced

1/2 cup Kalamata olives, pitted and sliced

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

Juice of 1 lemon

2 tablespoons extra virgin olive oil

1 teaspoon dried oregano

Salt and black pepper, to taste

Instructions
 

Prepare the Ingredients: Begin by draining and rinsing the chickpeas under cold water. Halve the cherry tomatoes, dice the cucumber, chop the red onion and bell pepper, and slice the olives. Chop the parsley and crumble the feta cheese if using.

    Mix the Veggies: In a large salad bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, red bell pepper, Kalamata olives, and fresh parsley.

      Make the Dressing: In a small bowl, whisk together the lemon juice, olive oil, dried oregano, salt, and black pepper until well combined.

        Combine and Toss: Pour the dressing over the chickpea salad and gently toss everything together until well coated. Make sure all the ingredients are nicely mixed.
