2 cups rolled oats

1 cup mixed berries (fresh or frozen, such as strawberries, blueberries, and raspberries)

1/2 cup almond butter (or peanut butter)

1/3 cup honey or maple syrup

1/4 cup almond milk (or any milk of choice)

1/4 cup chia seeds

1/2 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon salt

Optional: 1/4 cup chopped nuts or seeds (like walnuts or sunflower seeds) for added crunch

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chia seeds, cinnamon, and salt. If you’re adding nuts or seeds, stir them in at this stage.

      Prepare Wet Mixture: In a separate bowl, mix the almond butter, honey (or maple syrup), almond milk, and vanilla extract until smooth. If the almond butter is too thick, you can warm it slightly in the microwave for easier mixing.

        Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Stir until everything is well combined. Gently fold in the mixed berries, being careful not to break them up too much.

          Press and Spread: Transfer the mixture to the prepared baking pan and press it down firmly into an even layer. Use a spatula or your hands to pack it tightly to ensure it holds together.

            Bake: Place the pan in the preheated oven and bake for about 25-30 minutes, or until the edges are golden brown and the center is set.

              Cool and Cut: Remove the pan from the oven and allow it to cool completely in the pan. Once cool, use the parchment paper to lift the bars out of the pan. Place them on a cutting board and cut them into squares or rectangles.

                Store: Enjoy immediately or store the bars in an airtight container at room temperature for up to a week, or in the refrigerator for longer freshness.
