1 lb (450g) boneless, skinless chicken thighs, diced into bite-sized pieces

1 cup jasmine rice, rinsed and drained

2 cups low-sodium chicken broth

1 cup broccoli florets (fresh or frozen)

1 bell pepper, diced (any color)

3 cloves garlic, minced

1 onion, finely chopped

1/4 cup honey

1/4 cup soy sauce (low sodium)

1 tablespoon apple cider vinegar

2 tablespoons olive oil

1 tablespoon cornstarch mixed with 2 tablespoons of water (optional for thickening)

Salt and pepper, to taste

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Chicken: In a large skillet, heat olive oil over medium-high heat. Season the diced chicken thighs with salt and pepper. Add the chicken to the skillet and cook for about 5-7 minutes, or until browned and cooked through. Remove the chicken from the skillet and set it aside.

    Sauté the Vegetables: In the same skillet, add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for another minute until fragrant.

      Combine Ingredients: Add the bell pepper and broccoli to the skillet, and stir-fry for about 2-3 minutes until they begin to soften.

        Cook the Rice: Add the rinsed jasmine rice to the skillet, stirring well to combine with the vegetables. Pour in the chicken broth, and bring to a boil.

          Make the Sauce: While the rice is cooking, mix together the honey, soy sauce, and apple cider vinegar in a small bowl.

            Add Chicken and Sauce: Once the broth is boiling, reduce the heat to low, and return the cooked chicken to the skillet. Pour the honey-soy sauce mixture over the chicken and rice. Stir gently to combine.
