1 lb (450g) large shrimp, peeled and deveined

3 tbsp honey

3 tbsp soy sauce (low sodium if preferred)

2 garlic cloves, minced

1 tbsp fresh ginger, grated

2 tbsp olive oil

Salt and pepper to taste

1 cup jasmine rice (or brown rice)

2 cups broccoli florets

1 red bell pepper, thinly sliced

2 green onions, chopped

Sesame seeds, for garnish

Instructions
 

Cook the Rice: Begin by rinsing 1 cup of jasmine or brown rice under cold water. In a medium pot, combine rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes (or according to package instructions) until the rice is tender and water is absorbed.

    Prepare the Honey Garlic Sauce: In a small bowl, whisk together 3 tbsp honey, 3 tbsp soy sauce, 2 minced garlic cloves, and 1 tbsp freshly grated ginger. Set aside.

      Sauté the Vegetables: In a large skillet, heat 2 tbsp olive oil over medium-high heat. Add the broccoli florets and sliced red bell pepper to the pan. Sauté for about 3-4 minutes until the vegetables are vibrant and just tender. Remove from the skillet and set aside.

        Cook the Shrimp: In the same skillet, add the shrimp. Season with a pinch of salt and pepper. Cook for 2-3 minutes per side, or until they turn pink and opaque.
