4 boneless, skinless chicken breasts

2 large sweet potatoes, peeled and cubed

1/4 cup honey

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon dried thyme

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh lemon juice

1/4 cup chopped fresh parsley (for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: In a large mixing bowl, combine the cubed sweet potatoes with olive oil, smoked paprika, cumin, thyme, salt, and pepper. Toss until well coated.

      Prepare Chicken: In a separate bowl, mix honey, minced garlic, and lemon juice. Add the chicken breasts, ensuring they are well coated with the honey mixture.

        Assemble the Bake: In a large baking dish, spread the seasoned sweet potatoes evenly on the bottom. Place the honey-glazed chicken breasts on top of the sweet potatoes.

          Bake: Cover the baking dish with aluminum foil and bake for 25 minutes. After 25 minutes, remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C) and the sweet potatoes are tender.

            Garnish: Remove from the oven and let it rest for a few minutes. Sprinkle freshly chopped parsley over the top before serving.

              Serve: Serve warm, making sure to scoop up both the juicy chicken and the sweet, caramelized sweet potatoes.
