Honey Lime Chicken Skewers

1.5 lbs boneless, skinless chicken thighs (or breasts), cut into 1-inch cubes

1/4 cup honey

1/4 cup fresh lime juice (about 2-3 limes)

2 tablespoons soy sauce

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Zest of 1 lime

Fresh cilantro or parsley, for garnish

Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes beforehand)

Instructions
 

Prepare the Marinade: In a large mixing bowl, whisk together honey, lime juice, soy sauce, olive oil, minced garlic, ground cumin, chili powder, salt, black pepper, and lime zest until well combined.
