Honey Roasted Apple and Brie Flatbread

1 large flatbread or naan

2 medium-sized apples (such as Honeycrisp or Granny Smith), thinly sliced

1 cup Brie cheese, rind removed and cut into small pieces

2 tbsp honey (plus extra for drizzling)

1 tbsp olive oil

1 tsp cinnamon

1/2 tsp nutmeg (optional)

1/4 cup walnuts, chopped (or pecans)

Fresh thyme leaves for garnish (optional)

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Apples: In a mixing bowl, combine the thinly sliced apples, olive oil, honey, cinnamon, nutmeg, salt, and pepper. Toss until the apples are well-coated.

      Roast the Apples: Spread the apple mixture evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for about 15-20 minutes or until the apples are tender and slightly caramelized. Stir halfway through cooking for even roasting.

        Prepare the Flatbread: While the apples are roasting, place your flatbread on another baking sheet. Arrange the pieces of Brie cheese evenly over the surface of the flatbread.

          Bake the Flatbread: Once the apples are done roasting, remove them from the oven and pour the mixture, including any juices, on top of the Brie-topped flatbread. Make sure to distribute the apples evenly.

            Add Walnuts: Sprinkle the chopped walnuts (or pecans) on top of the apples. This will add a delightful crunch and complement the creaminess of the Brie.
