To fully appreciate the charm of baked donuts, it's essential to understand the key differences between them and traditional fried donuts. Fried donuts are often characterized by their golden-brown exterior and rich, dense texture, achieved through deep frying in oil. While undeniably delicious, the frying process can lead to a heavy and greasy end product. In contrast, baked donuts are prepared in a manner similar to muffins, resulting in a light and airy texture that is both satisfying and easy to enjoy.

Ingredients

1 cup all-purpose flour

1/2 cup granulated sugar

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 tsp ground cinnamon

1/4 cup unsalted butter, melted

1/2 cup buttermilk (or milk with 1/2 tsp vinegar added)

1 large egg

Zest of 1 lemon

1 tsp pure vanilla extract

1 cup fresh blueberries (or frozen, if out of season)

1/2 cup powdered sugar (for glaze)

2 tbsp fresh lemon juice (for glaze)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a donut pan with cooking spray or butter.

Combine Dry Ingredients: In a medium mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and cinnamon until well combined.

Mix Wet Ingredients: In a separate bowl, mix the melted butter, buttermilk, egg, lemon zest, and vanilla extract until thoroughly combined.

Combine Mixtures: Slowly add the wet ingredients to the dry ingredients. Stir gently until just combined—be careful not to overmix!

Fold in Blueberries: Gently fold in the blueberries until evenly distributed in the batter.

Fill the Donut Pan: Spoon the batter into the prepared donut pan, filling each cavity about 2/3 full. Use a piping bag or a zip-top bag with a corner snipped off for easier filling.

Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden and a toothpick inserted into the center comes out clean.

Cool Down: Allow the donuts to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Prepare the Glaze: In a small bowl, whisk together the powdered sugar and lemon juice until smooth. Adjust the consistency by adding more lemon juice (for thinner glaze) or powdered sugar (for thicker).

Glaze the Donuts: Once the donuts are completely cool, dip the tops into the lemon glaze or use a spoon to drizzle the glaze over the donuts. Optionally, sprinkle some extra lemon zest on top for added flavor and decoration.

Serve & Enjoy: Allow the glaze to set for a few minutes before serving. Enjoy your delightful lemon blueberry baked donuts with a cup of coffee or tea!
