Ingredients

1 lb large shrimp, peeled and deveined

1/4 cup unsalted butter

4 cloves garlic, minced

Zest and juice of 1 lemon

1/4 teaspoon red pepper flakes (optional)

Salt and black pepper, to taste

1/4 cup fresh parsley, chopped

8 slices of baguette or French bread

1/2 cup shredded mozzarella cheese

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

Prepare the Bread: Slice the baguette into 1/2-inch thick slices. Arrange the slices on a baking sheet. Brush them lightly with melted butter and bake in the preheated oven for about 5-7 minutes, or until golden and crispy.

Sauté the Shrimp: In a large skillet over medium heat, melt the remaining butter. Add minced garlic and cook for about 1 minute, stirring frequently until fragrant (do not let it brown).

Flavor the Shrimp: Increase the heat to medium-high. Add the shrimp to the skillet, season with salt, black pepper, and red pepper flakes (if using). Sauté for 2-3 minutes until the shrimp turn pink and opaque.

Add Lemon: Reduce heat to low, then add the lemon zest and juice to the skillet, stirring well to combine all flavors. Cook for another 1-2 minutes to let the shrimp absorb the lemony goodness. Remove from heat and stir in the chopped parsley.

Assemble the Toast Cups: Take your toasted bread slices and pile the sautéed shrimp mixture generously on top of each slice.

Add Cheese: Sprinkle shredded mozzarella cheese over each toast cup, ensuring the shrimp is well covered.

Bake Again: Return the prepared toast cups to the oven and bake for an additional 5-7 minutes or until the cheese is melted and bubbly.

Serve: Remove from the oven and let cool for a minute. Garnish with extra parsley if desired and serve immediately.

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 8 toast cups
