4 medium sweet potatoes, peeled and cut into 1-inch cubes

1/4 cup maple syrup

1/4 cup packed brown sugar

3 tablespoons olive oil

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup chopped pecans (optional)

Fresh parsley or thyme for garnish (optional)

Instructions
 

Preheat Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare Sweet Potatoes: In a large mixing bowl, combine the cubed sweet potatoes with olive oil, ensuring they are evenly coated.

      Mix Sugar and Spices: In a separate bowl, whisk together the maple syrup, brown sugar, cinnamon, nutmeg, salt, and black pepper.

        Combine Ingredients: Pour the syrup mixture over the sweet potatoes, mixing well to make sure all pieces are coated evenly.

          Arrange on Baking Sheet: Spread the sweet potatoes in a single layer on a large baking sheet lined with parchment paper for easy cleanup.
