Ingredients
  

1 ½ cups rolled oats

1 cup pecans, chopped

½ cup almond flour

½ cup almond butter (or any nut butter)

⅓ cup pure maple syrup

¼ cup coconut oil, melted

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon baking powder

¼ teaspoon salt

¼ cup dried cranberries or raisins (optional)

¼ cup dark chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, leaving an overhang on two sides for easy removal.

    Combine Dry Ingredients: In a large mixing bowl, combine rolled oats, chopped pecans, almond flour, cinnamon, baking powder, and salt. Stir well to combine.

      Mix Wet Ingredients: In another bowl, mix together the almond butter, maple syrup, melted coconut oil, and vanilla extract until smooth and well combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until thoroughly combined. If desired, fold in the dried cranberries or raisins and dark chocolate chips.

          Transfer to Baking Dish: Pour the mixture into the prepared baking dish and use a spatula to press it down evenly into the corners and sides.

            Bake: Place in the preheated oven and bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out mostly clean.

              Cool and Slice: Remove from the oven and let it cool in the pan for about 10 minutes. Use the parchment paper overhang to lift the bars out of the pan. Allow them to cool completely on a wire rack before slicing them into bars.

                Store: Store the bars in an airtight container at room temperature for up to a week or refrigerate for longer freshness.
