1 cup chickpea flour (besan)

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon garlic powder

1/4 teaspoon cumin

1 cup water

1 tablespoon olive oil (plus extra for cooking)

1/2 cup cherry tomatoes, halved

1/2 cup sliced bell peppers (mix of red, yellow, and green)

1/4 cup red onion, thinly sliced

1/2 cup feta cheese, crumbled

1/4 cup Kalamata olives, pitted and sliced

1/4 cup fresh spinach leaves

1 teaspoon dried oregano

Fresh basil leaves for garnish

Instructions
 

Prepare the Flatbread Base:

    - In a large mixing bowl, whisk together the chickpea flour, baking powder, salt, garlic powder, and cumin until well combined.

      - Gradually add water while stirring to form a smooth batter. Let it sit for about 10 minutes to thicken slightly.

        Cook the Flatbread:

          - Heat a non-stick skillet over medium heat and add a drizzle of olive oil.

            - Once hot, pour half of the batter into the skillet, spreading it evenly to form a flat round shape.

              - Cook for about 3-4 minutes on one side until the edges begin to lift and the bottom is golden. Flip and cook for another 2-3 minutes until cooked through. Remove from the skillet and repeat with the remaining batter to make a second flatbread.

                Preheat Oven:

                  - Preheat your oven to 400°F (200°C).

                    Assemble the Pizza:

                      - Place the cooked flatbreads on a baking sheet lined with parchment paper.

                        - Drizzle olive oil over the flatbreads.

                          - Evenly distribute the cherry tomatoes, bell peppers, red onion, feta cheese, and Kalamata olives over the flatbreads.

                            - Sprinkle fresh spinach on top and season with dried oregano.

                              Bake:

                                - Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the vegetables are tender and the cheese is slightly golden.

                                  Garnish and Serve:

                                    - Remove from the oven and let cool slightly. Garnish with fresh basil leaves.
