1 pound (450g) Italian sausage, casing removed

1 cup shredded mozzarella cheese

1/2 cup pizza sauce (plus extra for dipping)

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/2 teaspoon crushed red pepper flakes (optional)

1 package (1 lb) refrigerated pizza dough

1 egg, beaten (for egg wash)

Olive oil spray

Fresh basil leaves for garnish (optional)

Prepare the Filling: In a medium skillet over medium heat, crumble and cook the Italian sausage until browned and cooked through, about 5-7 minutes. Drain excess fat if necessary and add pizza sauce, Italian seasoning, garlic powder, and red pepper flakes (if using). Stir until heated through and combined. Remove from heat and let cool slightly.

    Roll Out the Dough: On a lightly floured surface, roll out the pizza dough to about 1/4-inch thickness. Cut the dough into 4-inch circles using a cookie cutter or the rim of a glass.

      Assemble the Pizza Pockets: Place 1-2 tablespoons of the sausage filling in the center of each dough circle. Top with a tablespoon of shredded mozzarella cheese. Be careful not to overfill.

        Seal the Pockets: Fold the dough over to create a half-moon shape, enclosing the filling. Press the edges firmly to seal, and then use a fork to crimp the edges for extra security.
