While the phyllo cups can be enjoyed at room temperature, preheating your oven to 350°F (175°C) is an optional step that can elevate the crunchiness of the cups. A brief 5-7 minute warm-up in the oven will allow the phyllo to crisp up even more, enhancing the overall texture of your mini salad cups. If you prefer a cold serving, simply skip this step and proceed with your chicken mixture.

Ingredients

2 cups cooked and chopped chicken breast

1 cup romaine lettuce, finely chopped

1/2 cup Caesar dressing (store-bought or homemade)

1/4 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

1 cup cherry tomatoes, halved

1 package of phyllo pastry cups (about 15 cups)

Fresh parsley, for garnish (optional)

Lemon wedges, for serving (optional)

Instructions

Preheat the Oven (optional): If you prefer warm pastry cups, preheat your oven to 350°F (175°C) and lightly toast the phyllo cups for 5-7 minutes until golden.

Prepare the Chicken Mixture: In a large bowl, combine the chopped chicken, romaine lettuce, Caesar dressing, grated Parmesan cheese, garlic powder, and black pepper. Mix well until all ingredients are evenly coated with dressing.

Fill the Cups: Carefully spoon the chicken Caesar mixture into each phyllo pastry cup, filling them generously but not overfilling.

Add Cherry Tomatoes: Top each filled cup with a couple of halved cherry tomatoes for a burst of color and freshness.

Garnish (optional): If desired, sprinkle a little more Parmesan cheese on top and garnish each cup with a small piece of fresh parsley.

Serve: Arrange the mini cups on a platter and serve immediately, or chill for about 30 minutes before serving. Offer lemon wedges on the side for a zesty squeeze!
