Ingredients

2 cups shredded cooked chicken

1 cup enchilada sauce (red or green, your choice)

1 teaspoon ground cumin

1 teaspoon chili powder

1 cup black beans, drained and rinsed

1 cup corn, frozen or canned

2 cups shredded cheese (cheddar or Mexican blend)

1 bag tortilla chips (about 10-12 oz)

½ cup diced tomatoes

½ cup sliced black olives (optional)

½ cup diced green onions

½ cup sour cream or Greek yogurt (for topping)

Fresh cilantro leaves (for garnish)

Instructions

Preheat Your Oven: Preheat your oven to 400°F (200°C).

Prepare the Chicken Mixture: In a large bowl, combine the shredded chicken, enchilada sauce, ground cumin, chili powder, black beans, and corn. Mix well until everything is evenly coated with the sauce.

Layer Chosen Chips: On a large baking sheet, spread a layer of tortilla chips in a single layer, ensuring there is enough space between each chip.

Add the Chicken Mixture: Spoon a generous amount of the chicken mixture over each tortilla chip, covering about three-quarters of the chip for optimal stacking.

Sprinkle with Cheese: Top each chicken-covered chip with a sprinkle of shredded cheese, ensuring an even distribution.

Bake: Place the baking sheet in the preheated oven and bake for approximately 10-15 minutes, or until the cheese is melted and bubbly.

Garnish and Serve: Remove from the oven and immediately top with diced tomatoes, sliced olives (if using), and green onions. Drizzle with sour cream or Greek yogurt. Finish with a sprinkle of fresh cilantro leaves.

Enjoy: Serve hot as an appetizer or a fun party snack, allowing guests to pick their chips right off the sheet!
