1 pound boneless, skinless chicken thighs

2 tablespoons olive oil

2 tablespoons Greek yogurt

1 tablespoon lemon juice

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

For the Tzatziki Sauce:

1 cup Greek yogurt

1 small cucumber, grated and drained

2 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 tablespoon lemon juice

Salt and pepper to taste

For Assembly:

Slider buns (12 small or mini pita breads)

Fresh tomatoes, sliced

Red onion, thinly sliced

Leafy greens (spinach, arugula, or romaine)

Instructions
 

Prepare the Marinade:

    In a bowl, combine olive oil, Greek yogurt, lemon juice, minced garlic, oregano, cumin, smoked paprika, salt, and pepper. Whisk until well combined.

      Marinate the Chicken:

        Add the chicken thighs to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 30 minutes to 2 hours for maximum flavor.

          Make the Tzatziki Sauce:

            While the chicken marinates, prepare the tzatziki sauce. In a medium bowl, mix together Greek yogurt, grated cucumber (ensuring excess water is squeezed out), minced garlic, dill, lemon juice, salt, and pepper. Stir well and refrigerate until ready to use.

              Cook the Chicken:

                Preheat a grill or skillet over medium-high heat. Remove chicken from the marinade and place it on the grill/skillet. Cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred. Let it rest for 5 minutes before slicing into strips.

                  Assemble the Sliders:

                    Slice your slider buns or pita breads in half. Spread a generous amount of tzatziki sauce on the bottom half. Layer on sliced chicken, fresh tomatoes, red onion, and leafy greens. Top with the other half of the bun.

                      Serve:
