Ingredients

1 cup cooked chicken, shredded

1 cup shredded mozzarella cheese

1 cup grated Parmesan cheese

1 cup all-purpose flour

2 tbsp baking powder

1/2 tsp garlic powder

1/2 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

1/2 cup milk

1/3 cup unsalted butter, melted

1 large egg

1/2 cup marinara sauce (for topping)

Fresh basil leaves (for garnish, optional)

Instructions

Preheat Oven: Preheat your oven to 375°F (190°C) and grease a mini muffin tin or line it with paper liners.

Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, garlic powder, Italian seasoning, salt, and black pepper until well combined.

Combine Wet Ingredients: In another bowl, mix the shredded chicken, mozzarella cheese, and Parmesan cheese. In a separate bowl, combine the melted butter, milk, and egg, then add this mixture to the dry ingredients. Stir gently until just combined.

Add Chicken Mixture: Fold the chicken and cheese mixture into the batter, ensuring it’s evenly distributed.

Fill Muffin Tin: Spoon the mixture into the prepared mini muffin tin, filling each cup about 3/4 full.

Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Top with Marinara: Remove the muffins from the oven and allow them to cool for a few minutes. Top each muffin with a small spoonful of marinara sauce.

Garnish: If desired, garnish with fresh basil leaves for an added touch of flavor and color.

Serve: Serve warm as an appetizer, snack, or a fun meal accompaniment.
