1 lb ground chicken

1 packet ranch dressing mix

1 cup shredded cheddar cheese

1 cup buttermilk biscuit mix

1/3 cup milk

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/4 cup chopped green onions (for garnish)

Optional: hot sauce for drizzling

Preheat your oven to 375°F (190°C). Grease a baking sheet or line it with parchment paper.

    Prepare the Chicken Mixture:

      - In a large bowl, combine the ground chicken with ranch dressing mix, garlic powder, onion powder, black pepper, and paprika. Mix until well combined.

        Form the Chicken Patties:

          - With your hands, shape the chicken mixture into small patties about 1 inch in diameter. You should be able to make approximately 12-15 patties.

            Cook the Chicken Patties:

              - In a large skillet, heat olive oil over medium heat. Add the formed chicken patties and cook for about 5-6 minutes on each side, or until they are fully cooked through and golden brown. Transfer to a plate and set aside.

                Prepare the Biscuit Dough:

                  - In a bowl, mix the biscuit mix with milk until a soft dough forms. If the dough is too sticky, add a little more biscuit mix until manageable.

                    Assemble the Melts:

                      - On a floured surface, roll out the biscuit dough to approximately 1/4 inch thick. Use a round cutter (or a wide glass) to cut out circles about 3 inches in diameter.

                        Layer the Melts:

                          - Place half of the biscuit circles on the greased baking sheet. Top each with a cooked chicken patty and a generous sprinkle of shredded cheddar cheese. Place another biscuit circle on top of each, pressing down gently.

                            Bake:

                              - Place in the preheated oven and bake for 12-15 minutes or until the biscuits are golden and the cheese is melted.
