Ingredients

6 slices of thick-cut brioche or challah bread

4 large eggs

1 cup whole milk (or your choice of milk)

1/2 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

A pinch of salt

1/4 cup melted butter for greasing the muffin tin

Maple syrup and powdered sugar for topping

Fresh berries for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Spray a muffin tin with cooking spray or use melted butter to grease each cup thoroughly.

Prepare the Bread: Cut the brioche or challah into small cubes, approximately 1-inch in size. Place them in a large bowl and set aside.

Make the Batter: In a separate bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, nutmeg (if using), and a pinch of salt until well combined.

Combine: Pour the egg mixture over the bread cubes and gently fold to coat all of the bread. Allow the mixture to sit for about 10-15 minutes so the bread can soak up the egg mixture.

Fill the Muffin Tin: Spoon the soaked bread mixture into each muffin cup, filling them about 3/4 full.

Bake: Place the muffin tin into the preheated oven and bake for 20-25 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.

Cool and Serve: Once baked, remove the tin from the oven and let the muffins cool for about 5 minutes. Carefully run a knife around the edges to loosen them, then gently remove each muffin from the tin.

Finish and Enjoy: Serve warm, drizzled with maple syrup and a dusting of powdered sugar. Garnish with fresh berries for an extra touch of sweetness!
