Ingredients

1 cup shredded cheese (cheddar, Monterey Jack, or a mix)

4 small flour tortillas

1/2 cup chopped fresh green chilies (mild to hot, based on preference)

1/4 cup diced red onion

1/4 cup fresh cilantro, chopped

1 teaspoon olive oil (for cooking)

1/2 teaspoon garlic powder

1/2 teaspoon ground cumin

Salt and pepper to taste

Salsa or sour cream (for dipping)

Instructions

Prep the Filling: In a mixing bowl, combine the shredded cheese, chopped green chilies, diced red onion, fresh cilantro, garlic powder, ground cumin, and a pinch of salt and pepper. Mix well to create a flavorful filling.

Assemble the Quesadillas: Take one tortilla and evenly spread about a quarter of the cheese and chili mixture on one half of the tortilla. Fold the other half over to enclose the filling. Repeat this process for the remaining tortillas.

Heat the Pan: In a medium skillet, heat the olive oil over medium heat. You want enough oil to lightly coat the pan while ensuring the quesadillas crisp up beautifully.

Cook the Quesadillas: Carefully place one folded quesadilla in the hot skillet. Cook for about 2-3 minutes on one side, or until golden brown and crispy. Flip it over and cook for another 2-3 minutes on the other side until the cheese is melted and the tortilla is crunchy. Repeat with the remaining quesadillas.

Slice and Serve: Remove the quesadillas from the skillet and let them cool for a minute. Slice each quesadilla into small triangles for easy serving.

Pairing: Serve warm with salsa or sour cream for dipping, and enjoy the spicy, cheesy goodness!
