2 medium ripe peaches, pitted and diced

1 teaspoon lemon juice

½ teaspoon ground cinnamon

½ cup almond flour

¼ cup cream cheese (or dairy-free cream cheese)

1 tablespoon powdered sugar

¼ cup slivered almonds, toasted (for garnish)

Fresh mint leaves (for garnish)

Prepare the Peach Filling: In a medium bowl, combine the diced peaches, honey, vanilla extract, lemon juice, and ground cinnamon. Toss gently to coat the peaches evenly and set aside to marinate for about 10 minutes.
