Ingredients

1 large round sourdough bread loaf (about 1 lb)

2 cups fresh spinach, chopped

1 cup cream cheese, softened

1 cup Greek yogurt

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

2 cloves garlic, minced

1 tbsp olive oil

1 tsp onion powder

1 tsp salt

½ tsp black pepper

½ tsp red pepper flakes (optional, for a kick)

1 cup diced bell peppers (red, yellow, or green, for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

Prepare the Bread Bowl: Carefully hollow out the round sourdough loaf, creating a bowl while keeping the crust intact. The removed bread can be reserved for dipping or making croutons later.

Cook the Spinach: In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Then, add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and set aside to cool slightly.

Mix the Dip: In a large mixing bowl, combine the softened cream cheese and Greek yogurt. Stir in the sautéed spinach, shredded mozzarella, grated Parmesan, onion powder, salt, black pepper, and red pepper flakes if using. Mix until well combined and smooth.

Fill the Bread Bowl: Spoon the spinach dip mixture into the hollowed sourdough bread bowl, filling it generously.

Bake: Place the filled bread bowl on a baking tray. Bake in the preheated oven for 20-25 minutes, until the cheese is bubbly and the top is golden.

Serve with Flair: Once baked, remove from the oven and let it cool for a few minutes. Cut the reserved bread into bite-sized pieces or use the diced bell peppers for garnish around the dip. Serve warm with the bread pieces for dipping!
