Sautéing spinach is a crucial step that enhances the overall flavor of your Mini Spinach Ricotta Toasts. This technique not only softens the leaves, making them more palatable but also allows for the development of deeper flavors. When sautéed, the natural sugars in the spinach caramelize slightly, adding a subtle sweetness that contrasts beautifully with the creamy ricotta.

Ingredients

1 cup fresh spinach, chopped

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 clove garlic, minced

1 tablespoon olive oil

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional)

1 French baguette or ciabatta, sliced into 1/2 inch thick pieces

1 tablespoon fresh lemon juice

Fresh herbs (like basil or chives) for garnish

Instructions

Sauté the Spinach: In a medium skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the chopped spinach, season with salt and pepper, and cook until wilted, about 2-3 minutes. Remove from heat and set aside to cool slightly.

Mix the Ricotta Filling: In a mixing bowl, combine the ricotta cheese, grated Parmesan cheese, lemon juice, and the sautéed spinach mixture. Stir well to combine. If you enjoy a little heat, you can also add in the red pepper flakes. Taste and adjust seasoning if necessary.

Prepare the Toasts: Preheat your oven to 375°F (190°C). Arrange the sliced baguette or ciabatta on a baking sheet. Brush each piece lightly with olive oil on both sides. Toast in the oven for about 5-7 minutes, or until they are lightly golden and crispy.

Assemble the Toasts: Once the bread is toasted, remove it from the oven and let it cool slightly. Spoon a generous amount of the spinach and ricotta mixture onto each slice of toasted bread.

Bake the Toasts (Optional): If you prefer a warm, melty effect, place the assembled toasts back into the oven for an additional 5 minutes.

Garnish and Serve: Remove from the oven and let cool for a minute. Garnish with fresh herbs and a drizzle of olive oil if desired. Serve immediately as an appetizer or light meal.
