1 medium sweet potato

4 large eggs

1/4 cup milk (or non-dairy alternative)

1/2 cup shredded cheddar cheese

1/4 cup green onions, finely chopped

Salt and pepper to taste

1/2 teaspoon garlic powder

Olive oil or cooking spray, for greasing

Optional toppings: avocado slices, salsa, hot sauce, or microgreens

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil or cooking spray.

    Prepare the Sweet Potato: Peel the sweet potato and slice it into 1/4-inch thick rounds. You should get about 10-12 rounds. Place the rounds on the prepared baking sheet and drizzle with olive oil. Season with salt and pepper. Toss to coat evenly.

      Roast the Sweet Potato: Roast the sweet potato rounds in the preheated oven for 20-25 minutes, flipping them halfway through, until they are tender and slightly crisp.

        Prepare the Egg Mixture: While the sweet potatoes are roasting, whisk together the eggs, milk, garlic powder, salt, and pepper in a mixing bowl until well combined. Stir in the shredded cheddar cheese and green onions.

          Add Eggs to Sweet Potatoes: Once the sweet potato rounds are ready, remove them from the oven and carefully pour the egg mixture over the top of each round, filling them just to the top (be mindful not to overfill).

            Bake Again: Return the baking sheet to the oven and bake for an additional 15-20 minutes, or until the eggs are set and slightly golden on the edges.
