Ingredients

8 medium-sized cherry tomatoes

1 can (5 oz) tuna in water, drained and flaked

2 tablespoons mayonnaise

1 tablespoon Greek yogurt

1 teaspoon Dijon mustard

1 tablespoon lemon juice

1 tablespoon capers, chopped

2 tablespoons red onion, finely diced

1 tablespoon fresh parsley, chopped

Salt and pepper to taste

Olive oil for drizzling

Instructions

Prepare the Tomatoes: Cut the tops off the cherry tomatoes and gently scoop out the insides using a small spoon or melon baller. Place them upside down on a paper towel to drain excess moisture while you prepare the filling.

Make the Tuna Filling: In a mixing bowl, combine the drained tuna, mayonnaise, Greek yogurt, Dijon mustard, lemon juice, chopped capers, red onion, and parsley. Mix well until all ingredients are thoroughly combined. Season with salt and pepper to taste.

Stuff the Tomatoes: Carefully spoon the tuna mixture into each hollowed tomato, pressing lightly to pack it in without breaking the tomato.

Drizzle with Olive Oil: Place the stuffed tomatoes on a serving platter and lightly drizzle with olive oil for a touch of added flavor.

Chill and Serve: Refrigerate for at least 15 minutes before serving to allow the flavors to meld. Serve cold as an appetizer or light lunch.
