Mini Turkey Bacon Hash Bites

Ingredients
  

1 pound of russet potatoes, peeled and diced into small cubes

6 ounces turkey bacon, chopped

1 cup shredded sharp cheddar cheese

1/2 small onion, finely diced

1/2 cup red bell pepper, finely diced

2 large eggs

2 tablespoons fresh parsley, chopped (or 1 tablespoon dried)

1 teaspoon garlic powder

1/2 teaspoon paprika

Salt and pepper to taste

Non-stick cooking spray

Optional: sour cream or Greek yogurt for serving

Instructions
 

Preheat Your Oven: Preheat your oven to 400°F (200°C). Grease a mini muffin tin with non-stick cooking spray and set aside.

    Cook the Potatoes: Place the diced potatoes in a large pot of salted water and bring to a boil. Reduce heat and simmer for about 8-10 minutes until just tender. Drain and let cool slightly.

      Cook the Turkey Bacon: In a skillet over medium heat, cook the chopped turkey bacon until crispy, about 5-7 minutes. Remove from skillet and let drain on a paper towel-lined plate.

        Sauté the Vegetables: In the same skillet with a bit of the bacon grease, add the diced onion and bell pepper. Sauté for 3-4 minutes until softened. Remove from heat.

          Mix Ingredients: In a large mixing bowl, combine the drained potatoes, turkey bacon, sautéed onion and bell pepper, shredded cheddar cheese, eggs, garlic powder, paprika, parsley, salt, and pepper. Mix until well combined.

            Fill Muffin Tin: Spoon the mixture into each cup of the prepared muffin tin, filling each well about three-quarters full to allow for rising.

              Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

                Cool & Serve: Once baked, remove from the oven and let mini bites cool for a few minutes. Gently remove them from the muffin tin using a small knife or spoon. Serve warm with a dollop of sour cream or Greek yogurt on the side if desired.
