1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

4 slices of whole grain bread

1/2 cup finely chopped spinach

1/4 cup finely diced bell peppers (red or yellow)

1/4 cup finely shredded carrots

2 tablespoons cream cheese, softened

1 teaspoon garlic powder

1 tablespoon olive oil

Salt and pepper to taste

Marinara sauce (for dipping)

Prep the Veggies: In a mixing bowl, combine chopped spinach, bell peppers, carrots, garlic powder, cream cheese, salt, and pepper. Mix until well combined.

    Cheese Mixture: In another bowl, mix the shredded cheddar and mozzarella cheeses together until evenly blended.

      Assemble the Sandwiches: Take each slice of whole grain bread and spread a generous layer of the veggie mixture on one side. Top with a handful of the cheese mixture. Cover with another slice of bread.

        Cook the Dippers: Heat the olive oil in a skillet over medium heat. Once the oil is hot, place the sandwiches in the skillet. Cook for about 2-3 minutes on each side until golden brown and the cheese is melted. Remove from heat and let cool slightly.
