Ingredients

1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1 cup diced dried apples (or apple chips)

1/2 cup chopped walnuts or pecans

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup vanilla protein powder (optional)

2 tablespoons chia seeds (optional)

Unsweetened coconut flakes, for rolling (optional)

Instructions

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, diced dried apples, chopped walnuts or pecans, ground cinnamon, nutmeg, salt, and protein powder if using. Mix well to ensure all ingredients are evenly distributed.

Add Wet Ingredients: Add the almond butter and honey or maple syrup into the dry mixture. Using a spatula or your hands, mix thoroughly until all ingredients are well combined and stick together.

Incorporate Chia Seeds: If you are using chia seeds, stir them into the mixture now until evenly combined.

Form the Bites: With your hands, take small portions of the mixture and roll them into balls, approximately 1-inch in diameter. If the mixture is too sticky, you can wet your hands slightly to make rolling easier.

Coat (Optional): If desired, roll each energy bite in unsweetened coconut flakes to add texture and flavor.

Chill: Place the formed energy bites on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to firm them up.

Store and Serve: Once set, transfer the energy bites to an airtight container. They can be stored in the refrigerator for up to two weeks or in the freezer for extended freshness. Enjoy as a quick snack or post-workout treat!
