1 cup rolled oats

1/2 cup unsweetened shredded coconut

1/2 cup almond butter (or any nut/seed butter of your choice)

1/4 cup honey or maple syrup

Zest of 1 large lemon

2 tbsp lemon juice (freshly squeezed)

1/4 cup ground flaxseed

1/2 tsp vanilla extract

A pinch of sea salt

Optional: 2 tbsp chia seeds or mini chocolate chips for added texture

Instructions
 

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, ground flaxseed, and sea salt. If you're using chia seeds or chocolate chips, add them here too.

    Mix Wet Ingredients: In a separate bowl, mix together the almond butter, honey (or maple syrup), lemon zest, lemon juice, and vanilla extract until smooth and well combined.

      Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Stir well until everything is evenly coated and combined into a sticky dough.

        Form Energy Balls: Using your hands, take small portions of the mixture and roll them into balls about 1 inch in diameter. If the mixture is too sticky, you can dampen your hands slightly with water to make rolling easier.

          Chill in Refrigerator: Place the energy balls on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to help them firm up.
