Ingredients

1 cup walnuts (or pecans, if preferred)

1 cup medjool dates, pitted

½ cup cacao powder (or cocoa powder)

¼ cup maple syrup (or honey)

1 teaspoon vanilla extract

¼ teaspoon sea salt

½ cup dark chocolate chips (dairy-free if needed)

Optional toppings: coconut flakes, crushed nuts, or cocoa powder for rolling

Instructions

Prep the Nuts: Place the walnuts in a food processor and pulse until finely ground. Be careful not to over-process; you want a crumbly texture, not nut butter.

Add Dates: Add the pitted medjool dates to the ground walnuts. Process until the mixture becomes sticky and starts to clump together. If the mixture is too dry, add 1-2 dates more, one at a time.

Incorporate Flavors: Add the cacao powder, maple syrup, vanilla extract, and sea salt to the food processor. Pulse again until the ingredients are well combined and form a dough-like consistency.

Melt the Chocolate: In a microwave-safe bowl, melt the dark chocolate chips in 20-second intervals, stirring between each interval until smooth.

Combine: Transfer the brownie mixture to a medium bowl and pour in the melted chocolate. Stir well to incorporate the chocolate fully into the brownie mixture.

Shape the Bites: Using your hands, scoop out small portions of the mixture and roll them into bite-sized balls (about 1 inch in diameter). If desired, roll the balls in coconut flakes, crushed nuts, or cocoa powder to coat.

Chill: Place the brownie bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.

Serve and Enjoy: After chilling, the brownie bites are ready to serve! They can be stored in an airtight container in the fridge for up to a week.
