Ingredients
  

For the base:

1 cup graham cracker crumbs

1/2 cup unsweetened shredded coconut

1/4 cup almond flour

1/3 cup melted coconut oil

2 tablespoons maple syrup

For the mango layer:

2 large ripe mangoes, peeled and diced (about 2 cups)

1/4 cup coconut cream (chilled)

1/3 cup honey or agave syrup

1 tablespoon fresh lime juice

1 teaspoon vanilla extract

1 tablespoon gelatin or agar-agar (for a vegan version)

For the top layer (optional):

1/2 cup whipped coconut cream (for topping)

Fresh mint leaves for garnish

Instructions
 

Prepare the Base:

    - In a medium bowl, combine graham cracker crumbs, shredded coconut, and almond flour.

      - Stir in melted coconut oil and maple syrup until the mixture is well combined and crumbly.

        - Press the mixture evenly into the bottom of a lined 8x8-inch baking dish to form the base. Use a flat-bottomed glass to pack it tightly. Refrigerate while you prepare the mango layer.

          Make the Mango Layer:

            - In a blender or food processor, add the diced mangoes, coconut cream, honey (or agave), lime juice, vanilla extract, and gelatin (or agar-agar).

              - Blend until smooth and creamy. If using gelatin, be sure to dissolve it first in a small amount of warm water if it's not instant.

                Combine Layers:

                  - Pour the mango mixture over the chilled base, spreading it evenly with a spatula.

                    - Gently tap the dish on the counter to remove any air bubbles. Refrigerate for at least 4 hours or until set.

                      Serve:

                        - Once set, lift the bars out of the dish using the parchment paper. Cut into squares or rectangles.

                          - For an optional creamy topping, dollop whipped coconut cream on each bar and garnish with fresh mint leaves.
