2 cups cooked chicken, shredded or diced

4 cups broccoli florets (fresh or frozen)

1 cup uncooked quinoa (or rice for a shortcut)

3 cups chicken broth

1 cup sharp cheddar cheese, grated

1 cup cream of mushroom soup (or homemade equivalent)

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon paprika

½ teaspoon black pepper

½ teaspoon salt (or to taste)

½ cup breadcrumbs (optional for topping)

2 tablespoons olive oil or butter

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Pan: In a large oven-safe skillet or casserole dish, heat the olive oil or butter over medium heat. Add the broccoli florets and sauté for about 3-4 minutes, until they are bright green and slightly tender.

      Combine Ingredients: In the same pan, stir in the shredded chicken, uncooked quinoa (or rice), chicken broth, cream of mushroom soup, garlic powder, onion powder, paprika, black pepper, and salt. Mix well to ensure all ingredients are evenly distributed.

        Cheesy Layer: Gently fold in ¾ cup of the grated cheddar cheese, mixing until the cheese is melted into the mixture.

          Bake: Transfer the skillet to the preheated oven and bake uncovered for 25-30 minutes, or until the quinoa is cooked and fluffy, and have absorbed most of the broth. If using rice, ensure it’s tender and the liquid is absorbed as well.

            Cheesy Topping: Remove the pan from the oven and sprinkle the remaining ¼ cup of cheddar cheese evenly over the top. If desired, add breadcrumbs for a crispy topping. Return to the oven for an additional 5-10 minutes, or until the cheese is bubbly and golden, and the breadcrumbs are toasted.
