One-Pan Lemon Garlic Chicken and Veggies Dinner

4 boneless, skinless chicken breasts

2 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

Juice of 2 lemons

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cup broccoli florets

1 cup bell peppers (mixed colors), sliced

1 medium red onion, sliced

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Marinate the Chicken: In a large mixing bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, oregano, thyme, salt, and pepper. Add the chicken breasts and marinate for at least 15 minutes (if time allows, marinate for an hour for more flavor).

      Prepare the Veggies: While the chicken is marinating, prepare the vegetables. In a separate bowl, toss the cherry tomatoes, broccoli florets, bell peppers, and red onion with a drizzle of olive oil and a pinch of salt and pepper.

        Arrange on Baking Sheet: In a large rimmed baking sheet or pan, spread the marinated chicken breasts in the center, then arrange the mixed vegetables around the chicken in a single layer.

          Bake: Place the pan in the preheated oven and bake for about 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the vegetables are tender. If desired, broil on high for an additional 2-3 minutes for extra color.

            Serve: Remove from the oven, and let it rest for a few minutes. Garnish with chopped fresh parsley and serve with lemon wedges on the side for an extra zesty kick.
