1 French baguette, sliced into 1/2 inch rounds

2 large ripe peaches, diced

1 cup fresh ricotta cheese

2 tablespoons honey

1 tablespoon fresh lemon juice

1 tablespoon fresh basil, finely chopped

Salt and pepper to taste

Olive oil, for drizzling

Balsamic glaze, for drizzling (optional)

Instructions
 

Prepare the Baguette:

    Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet. Drizzle lightly with olive oil. Bake for about 8-10 minutes, or until the bread is golden and crispy.

      Make the Peach Mixture:

        In a mixing bowl, combine the diced peaches, honey, lemon juice, basil, and a pinch of salt and pepper. Gently toss to coat the peaches evenly and let it sit for about 10 minutes to allow the flavors to meld.
