Pear & Raspberry Yogurt Parfaits

2 ripe pears, peeled and diced

1 cup fresh raspberries (or frozen, thawed)

2 cups Greek yogurt (plain or vanilla)

2 tablespoons honey (adjust to taste)

1 teaspoon vanilla extract

1 cup granola (your choice, preferably with nuts)

Fresh mint leaves for garnish

Prepare the Pears: Peel and dice the pears into small cubes. If desired, toss them with a little honey and the vanilla extract to enhance their flavor. Set aside.

    Yogurt Mix: In a bowl, combine the Greek yogurt with 1 tablespoon of honey and 1 teaspoon of vanilla extract. Mix well until smooth. Adjust sweetness as needed by adding more honey.

      Layer the Parfaits: In serving glasses or bowls, start by adding a layer of the yogurt mixture at the bottom, approximately 1/4 cup.

        Add Pears: Top the yogurt layer with a few spoonfuls of the diced pears.

          Add Raspberries: Next, add a layer of fresh raspberries on top of the pears, about 1/4 cup.

            Add Granola: Sprinkle a layer of granola (about 2-3 tablespoons) over the raspberries for crunch.

              Repeat Layers: Repeat the layering process (yogurt, pears, raspberries, granola) until you reach the top of your glasses, finishing with a layer of yogurt and a sprinkle of granola on top.

                Garnish: Garnish each parfait with a few whole raspberries, a few pear cubes, and fresh mint leaves for a touch of freshness and color.
