1 cup pumpkin puree (canned or fresh)

1/2 cup granulated sugar

1/2 cup packed brown sugar

1/2 cup vegetable oil (or melted coconut oil)

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1/2 cup walnuts or pecans, chopped (optional)

1/2 cup chocolate chips (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan or line it with parchment paper for easy removal.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix until smooth and well combined.

      Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, spices (cinnamon, nutmeg, ginger), and salt until evenly mixed.

        Combine Wet and Dry Mixes: Gradually fold the dry ingredients into the wet mixture using a spatula or wooden spoon. Mix just until combined; it's okay if there are small lumps—do not overmix!
