Ingredients

1 cup ripe bananas (about 2 medium bananas), mashed

1 cup canned pumpkin puree

1/3 cup vegetable oil (or melted coconut oil)

1/3 cup honey or maple syrup

2 large eggs

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon ground ginger

½ teaspoon salt

½ cup walnuts or pecans, chopped (optional)

½ cup chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease the cups.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, pumpkin puree, vegetable oil, honey (or maple syrup), eggs, and vanilla extract. Whisk together until smooth and well combined.

Prepare Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.

Combine Mixtures: Gradually add the dry ingredient mixture to the wet ingredients, folding gently until just combined. Avoid overmixing, as this can lead to tough muffins.

Add Mix-ins: If you’re using nuts or chocolate chips, gently fold them into the batter.

Fill Muffin Tins: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Bake: Bake in the preheated oven for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Allow the muffins to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.

Enjoy: Serve warm or at room temperature and relish the delightful combination of pumpkin and banana!
