Ingredients

2 cups canned pumpkin puree

1 cup plain Greek yogurt

1 cup whipped cream (store-bought or homemade)

1 teaspoon vanilla extract

1 tablespoon pumpkin pie spice

½ cup brown sugar

½ cup granola (for layering)

¼ cup chopped pecans (for topping)

Extra whipped cream (for garnish)

Ground cinnamon (for garnish)

Instructions

Prepare the Pumpkin Mixture: In a large bowl, combine the canned pumpkin puree, Greek yogurt, vanilla extract, brown sugar, and pumpkin pie spice. Mix well until smooth and creamy. Taste, and adjust sweetness if necessary.

Layer the Parfaits: In clear, medium-sized glasses or jars, start by adding a layer of the pumpkin mixture at the bottom. Use about ¼ cup for each serving.

Add Granola: Next, add a layer of granola on top of the pumpkin mixture (about 2 tablespoons). This adds a delightful crunch.

Repeat Layers: Repeat the layering process, alternating between the pumpkin mixture and granola until the glasses are filled, leaving some space at the top for the whipped cream.

Top with Whipped Cream: At the very top, add a generous dollop of whipped cream.

Garnish: Sprinkle the chopped pecans on top of the whipped cream and finish with a light dusting of ground cinnamon for extra flavor.

Chill (Optional): For best results, refrigerate the parfaits for at least 30 minutes before serving to allow the flavors to meld.

Serve: Grab a spoon and enjoy your delightful Pumpkin Pie Parfaits!
