12 oz fettuccine pasta

1 cup pumpkin puree (canned or fresh)

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 cup unsalted butter

2 cloves garlic, minced

1 tablespoon fresh sage, chopped (or 1 teaspoon dried sage)

1/2 teaspoon nutmeg

Salt and pepper to taste

Optional: toasted pumpkin seeds for garnish

Cook the Pasta:

    - In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

      Prepare the Alfredo Sauce:

          Add Pumpkin and Cream:

            - Stir in the pumpkin puree and heavy cream, mixing until well combined. Bring the mixture to a gentle simmer.
