2 cups rolled oats

1 cup nuts (e.g., almonds, pecans, or walnuts), roughly chopped

1 cup pumpkin seeds (pepitas)

1/2 cup unsweetened shredded coconut

1/2 cup maple syrup or honey

1/4 cup coconut oil, melted

1 cup pumpkin puree

2 teaspoons vanilla extract

1 tablespoon pumpkin spice blend (or a mix of cinnamon, nutmeg, and ginger)

1/2 teaspoon salt

1/2 cup dried fruit (e.g., cranberries, raisins, or apricots), optional

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper for easy cleanup.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, pumpkin seeds, shredded coconut, pumpkin spice, and salt. Stir until the ingredients are evenly mixed.

      Combine Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, maple syrup (or honey), pumpkin puree, and vanilla extract until smooth and well combined.

        Combine Mixtures: Pour the wet mixture over the dry mixture. Stir thoroughly until all the dry ingredients are evenly coated with the wet mixture.

          Spread on Baking Sheet: Transfer the mixture onto the prepared baking sheet, spreading it out evenly. Press down firmly to create a compact layer for better clustering.
