2 cups rolled oats

1 cup pumpkin puree (canned or fresh)

1/2 cup almond butter (or any nut butter of choice)

1/4 cup honey or maple syrup

1/4 cup brown sugar (packed)

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon ground ginger

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped walnuts (or pecans)

1/2 cup dried cranberries or raisins

Optional: 1/4 cup chocolate chips

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Mix the Wet Ingredients: In a large mixing bowl, whisk together the pumpkin puree, almond butter, honey (or maple syrup), and vanilla extract until smooth and well combined.

      Combine Dry Ingredients: In a separate bowl, mix the oats, brown sugar, cinnamon, nutmeg, ginger, baking powder, and salt. Stir until all dry ingredients are fully incorporated.

        Combine the Mixtures: Gradually add the dry ingredient mixture into the wet ingredients. Stir until everything is well mixed. If the mixture is too thick, you can add a tablespoon of water or milk to reach a better consistency.
