Ingredients

1 cup all-purpose flour

1/2 cup whole wheat flour

2 tablespoons brown sugar

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 tablespoon pumpkin pie spice (plus extra for garnish)

2 large eggs

1 cup canned pure pumpkin puree

1 cup buttermilk

1/4 cup vegetable oil (or melted coconut oil)

1 teaspoon vanilla extract

Maple syrup and whipped cream for serving (optional)

Instructions

Prepare the Waffle Maker: Preheat your waffle maker according to the manufacturer's instructions. Grease it lightly with cooking spray if needed.

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, brown sugar, baking powder, baking soda, salt, and pumpkin pie spice until fully combined.

Combine Wet Ingredients: In another bowl, beat the eggs. Then, add the pumpkin puree, buttermilk, vegetable oil, and vanilla extract. Whisk until smooth and well blended.

Combine Mixtures: Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined; be careful not to overmix—the batter should be slightly lumpy.

Cook the Waffles: Pour the appropriate amount of batter onto the preheated waffle maker (about 1/2 to 2/3 cup depending on the size of your maker) and close the lid. Cook according to your waffle maker instructions until golden brown and crispy.

Serve: Carefully remove the waffles and keep them warm in a low oven (200°F or 95°C) while you repeat with the remaining batter. Serve with maple syrup, whipped cream, and a sprinkle of pumpkin pie spice for an extra touch of flavor.
