Ingredients

For the Cookies:

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

½ teaspoon ground ginger

½ teaspoon ground nutmeg

½ teaspoon salt

1 cup canned pumpkin puree

½ cup vegetable oil

1 cup brown sugar, packed

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

For the Cream Cheese Filling:

8 ounces cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

Pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt. Set aside.

Mix Wet Ingredients: In a large bowl, mix the pumpkin puree, vegetable oil, brown sugar, and granulated sugar until combined. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Scoop Cookies: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving about 2 inches between each.

Bake: Bake for 12-15 minutes, or until the edges are set and the tops spring back when touched. Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Make the Filling: While the cookies cool, prepare the cream cheese filling. In a medium bowl, beat the softened cream cheese and butter together until smooth and creamy. Gradually add the powdered sugar, vanilla extract, and a pinch of salt, mixing until well combined and fluffy.

Assemble the Whoopie Pies: Once the cookies have completely cooled, turn half of them upside down. Spread a generous dollop of cream cheese filling on each of these cookies, then top with the remaining cookies to form sandwiches.

Chill and Serve: Refrigerate the assembled whoopie pies for about 30 minutes to allow the filling to set. Serve chilled or at room temperature.

Prep Time: 20 minutes | Total Time: 1 hour | Servings: 12-15 whoopie pies
