4 medium bell peppers (any color)

1 pound ground beef (or turkey)

1 packet taco seasoning (about 1 ounce)

1 cup black beans (canned, drained and rinsed)

1 cup corn (canned or frozen)

1 cup diced tomatoes (canned or fresh)

1 cup shredded cheese (cheddar or Mexican blend)

1 tablespoon olive oil

Fresh cilantro for garnish (optional)

Sour cream, avocado, or your favorite toppings (optional)

Instructions
 

Prepare the Bell Peppers: Slice the tops off the bell peppers and remove the seeds and membranes. Rinse them under cold water and set aside.

    Cook the Meat: In a skillet over medium heat, add olive oil and ground beef. Cook until browned, breaking it apart with a spatula, for about 5-7 minutes.

      Season the Mixture: Once the meat is cooked, drain any excess fat. Stir in the taco seasoning, black beans, corn, and diced tomatoes. Cook for another 5 minutes, mixing well until everything is heated through.

        Stuff the Peppers: Carefully spoon the taco meat mixture into each bell pepper, packing it down gently. Top each stuffed pepper with a generous amount of shredded cheese.

          Air Fry the Peppers: Preheat your air fryer to 375°F (190°C). Arrange the stuffed peppers in a single layer in the air fryer basket. You may need to cook them in batches. Air fry for about 12-15 minutes, or until the peppers are tender and the cheese is melted and bubbly.

            Garnish and Serve: Once cooked, carefully remove the stuffed peppers from the air fryer. Garnish with fresh cilantro and serve with sour cream, avocado, or any of your favorite toppings.
