Quick and Crispy Air Fryer Veggie Fritters

1 cup grated zucchini (about 1 medium zucchini)

1 cup grated carrots (about 2 medium carrots)

1/2 cup finely chopped bell pepper (red or yellow for color)

1/2 cup finely chopped onion (yellow or green)

1/2 cup chickpea flour (besan)

1/4 cup all-purpose flour (or oat flour for a gluten-free option)

1 egg (or flax egg for a vegan option)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika (or chili powder for heat)

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1 tablespoon fresh parsley or cilantro (chopped)

Cooking spray or a drizzle of olive oil for air frying

Instructions
 

Prepare the Veggies: Grate the zucchini and carrots using a box grater or food processor. Squeeze out excess moisture from the zucchini with a clean kitchen towel or paper towels to prevent soggy fritters.

    Mix Ingredients: In a large mixing bowl, combine the grated zucchini, carrots, chopped bell pepper, and onion. Add the chickpea flour, all-purpose flour, egg (or flax egg), garlic powder, onion powder, paprika, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

      Form Fritters: Using your hands, scoop a tablespoon of the mixture and form it into small patties. Flatten them slightly to ensure even cooking. Repeat until all the mixture is shaped into fritters.

        Preheat Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

          Cook the Fritters: Lightly spray the air fryer basket with cooking spray or brush with a little olive oil. Place the fritters in a single layer in the basket, making sure they do not touch each other. You may need to work in batches depending on your air fryer size. Lightly spray the tops of the fritters with more cooking spray.

            Air Fry: Cook the fritters in the air fryer for 12-15 minutes, flipping halfway through, until they are golden brown and crispy.

              Serve: Remove the fritters from the air fryer and let them cool for a few minutes on a cooling rack. Serve warm with your favorite dipping sauce, such as yogurt, tahini, or a spicy mayonnaise.
