2 medium zucchinis

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1 tablespoon olive oil

Optional: marinara sauce or ranch dressing for dipping

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Wash and dry the zucchinis. Cut off the ends and slice them into sticks about 1/4 inch thick, resembling French fries.

      Set Up Breading Station: In a shallow bowl, beat the eggs with the olive oil until well combined. In another bowl, mix breadcrumbs, Parmesan cheese, garlic powder, onion powder, oregano, salt, and pepper.

        Bread the Zucchini: Dip each zucchini stick first into the egg mixture, allowing excess to drip off, then coat it well with the breadcrumb mixture. Place the breaded zucchini fries on the prepared baking sheet, ensuring they are evenly spaced for even baking.
