2 cups cooked turkey, shredded or diced (leftover or rotisserie)

1/2 cup barbecue sauce (your favorite brand)

1 cup mixed bell peppers, thinly sliced (red, yellow, green)

1 cup fresh spinach leaves

1/2 cup shredded carrots

1/4 cup red onion, thinly sliced

4 large whole grain tortillas

1/2 cup shredded cheese (cheddar or mozzarella)

Salt and pepper to taste

Optional: fresh cilantro, avocado slices, or jalapeños for extra flavor

Instructions
 

Prepare the Turkey: In a medium bowl, combine the cooked turkey with the barbecue sauce, mixing well until the turkey is fully coated. Set aside to let the flavors meld.

    Sauté the Veggies: In a skillet over medium heat, add a splash of olive oil. Toss in the sliced bell peppers and red onion. Sauté for about 3-4 minutes until the veggies are slightly tender but still crisp. Season with a pinch of salt and pepper. Remove from heat.

      Assemble the Wraps: Lay a tortilla flat on a clean surface. Start by layering with a handful of fresh spinach leaves, then add a few spoonfuls of the BBQ turkey mixture, followed by the sautéed veggies. Sprinkle a handful of shredded carrots and cheese on top.

        Wrap It Up: Fold the sides of the tortilla over the filling, then roll it up from the bottom to create a tight wrap. If needed, you can secure the wrap with a toothpick or wrap it in parchment paper.
