Quick Chicken and Vegetable Stir-Fry Skillet

Ingredients
  

1 lb (450g) boneless, skinless chicken breast, sliced into thin strips

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

2 cloves garlic, minced

1 inch fresh ginger, grated

2 cups mixed bell peppers, sliced (red, yellow, and green)

1 cup broccoli florets

1 cup snow peas

1 medium carrot, julienned

2 green onions, chopped

1 tablespoon sesame oil

Cooked jasmine or brown rice, for serving

Salt and pepper to taste

Sesame seeds, for garnish (optional)

Instructions
 

Marinate the Chicken: In a medium bowl, combine the sliced chicken, soy sauce, oyster sauce, and cornstarch. Mix well to coat the chicken evenly. Let it marinate for at least 15 minutes while you prepare the vegetables.

    Prepare the Vegetables: Wash and slice the bell peppers, broccoli, snow peas, and carrot. Mince the garlic and grate the ginger. Set aside.

      Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Once the oil is hot, add the marinated chicken in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set aside.

        Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant. Then, toss in the mixed bell peppers, broccoli, snow peas, and julienned carrot. Cook for 4-5 minutes, stirring frequently, until the vegetables are tender-crisp.

          Combine & Season: Return the cooked chicken to the skillet with the vegetables. Drizzle with sesame oil and toss everything together. Cook for an additional 2 minutes to heat through and combine flavors. Season with salt and pepper to taste.

            Serve: Remove from heat and garnish with chopped green onions and sesame seeds if desired. Serve the stir-fry hot over a bed of jasmine or brown rice.
