4 whole wheat tortillas

1 cup shredded Mexican cheese blend

1 cup fresh spinach, chopped

1/2 cup bell peppers, diced (use a mix of colors for vibrant quesadillas)

1/2 cup cooked black beans, rinsed and drained

1/3 cup corn kernels (canned or frozen)

1/4 cup red onion, finely chopped

1 tablespoon olive oil (optional for brushing)

1 teaspoon taco seasoning (or adjust to taste)

Salsa and sour cream for serving

Preheat Air Fryer: Preheat your air fryer to 375°F (190°C) for about 3-5 minutes while you prepare the quesadilla filling.

    Prepare Filling: In a mixing bowl, combine the chopped spinach, diced bell peppers, black beans, corn, red onion, and taco seasoning. Mix until well combined.

      Assemble Quesadillas: Lay one tortilla flat on a clean surface. Sprinkle 1/4 cup of the cheese over half of the tortilla. Next, add a generous amount of the veggie mixture on top of the cheese, then sprinkle another 1/4 cup of cheese over the veggies. Fold the tortilla in half to cover the filling. Repeat with the remaining tortillas.

        Brush (Optional): If desired, lightly brush the top of the quesadillas with olive oil for an extra crispy texture.
