4 whole wheat tortillas

1 cup shredded cheese (cheddar or Mexican blend)

1 cup mixed veggies (bell peppers, spinach, and zucchini), finely chopped

1/2 cup black beans, drained and rinsed

1/2 teaspoon taco seasoning

1 tablespoon olive oil

Sour cream or yogurt, for dipping (optional)

Salsa, for dipping (optional)

Instructions
 

Prep the Veggies: In a bowl, combine the finely chopped bell peppers, spinach, zucchini, and black beans. Sprinkle with taco seasoning and mix well to coat the veggies.

    Assemble the Quesadillas: Place a tortilla on a clean surface. Evenly sprinkle about 1/4 cup of cheese on one half of the tortilla. Top with a generous portion of the veggie and bean mixture and then add another layer of cheese on top. Fold the tortilla in half to create a half-moon shape. Repeat for the remaining tortillas.

      Brush with Olive Oil: Lightly brush both sides of each quesadilla with olive oil to help them crisp up in the air fryer.

        Air Fry the Quesadillas: Preheat the air fryer to 350°F (175°C). Place 2 quesadillas in the air fryer basket, ensuring they are not overlapping. Cook for about 6-8 minutes, flipping halfway through, until golden brown and crispy.

          Slice and Serve: Remove the quesadillas from the air fryer and let them cool for a minute before slicing into wedges. Serve warm with sour cream or salsa for dipping.
